One thing that the fast food employee's manager underestimated in a major way was the fact that his own boss, the owner of the store, would be stopping by the establishment that afternoon. The employee had a decent relationship with this guy and had a feeling that he wouldn't understand why he was still working if his allergies were this severe.
Let's also not forget the fact that this employee's job heavily involved working with food. It doesn't get more unsanitary than having a snotty mess handle your burger order.
